Coconut & Date Oatmeal

Ingredients

  • 3 ¼ cups (780ml) water

  • ¼ tsp. salt

  • 2 cups (180g) rolled oats

  • 1 cup (240ml) almond milk, unsweetened


For the toppings:

  • 4 tbsp. desiccated coconut, unsweetened

  • 8 dates, sliced

  • 4 tbsp. roasted cashews

  • 4 tbsp. honey

Preparation

Step 1


Pour the water and salt into a pot and place over a high heat and bring to a boil. Now add in the rolled oats, reduce the heat to low and simmer gently, stirring occasionally until creamy, for around 5 minutes. Add in the milk and stir until well combined.


Step 2


Divide the oats between 4 bowls and top with the coconut, sliced dates, cashews and honey. Serve immediately.
